Cilantro Lime Beans & Rice

Who doesn’t love a good burrito bowl? Especially one that you can make yourself! With this delicious cilantro lime beans and rice combo, you will have a real crowd pleaser on your hands! This simple and delightful recipe can be made for lunch or dinner, and is great served with your favorite burrito bowl toppings, or even alone!

Ingredients

  • 3 cups rice (I used brown from a local farmer’s market)
  • 1 1/2 or 2 cups black beans (washed and soaked)
  • 1 tbsp olive oil
  • 3 gloves of garlic (minced)
  • 1 tbsp olive oil
  • Cumin to taste (I used about 1/2 tbsp)
  • 1 purple onion
  • Cilantro (enough to be evenly distributed in mixture)
  • 1 green onion
  • 1 small/medium lime
  • Any toppings for burrito!

Directions

  1. Add olive oil to a large non-stick pan. Chop the whole onion and add to the pan for a few minutes.
  2. Mince the garlic and add to the pan for about a minute. Add the cumin.
  3. Add the rice and mix around in the pan. Add the beans, being careful to not add the water with the beans as well.
  4. Stir the mixture around for a few minutes, and let sit for about 5 minutes. Add the cilantro and half of the lime juice.
  5. Mix around a few more times.
  6. Once finished, add any toppings you like. I used spinach, salsa, avocado, onion, tomatoes, and chicken, but it is also delicious by itself.
